No Bake Oreo Cheese Cake

I recently went shopping at Daiso (Japanese Dollar store) and  went nuts when I saw heart shaped pans for baking :)   I'm a sucker for anything heart shaped and food tastes so much better when it's prettier.  I like to pretend I'm an Aztec God feasting on the hearts of sacrifices.....what? At least I pretend without the help of bath salts, but I digress.

I decided that Oreo cheesecakes at local Coffee Shops are SOOOOOOO not worth the price.  It's just Oreos and cream cheese having a party on a cookie crust.  it's not even baked!  ugh It bugs me when I see people buy things they can make for less than half the price.  Besides, I doubt Starbucks makes metaphors about Heart-eating Aztec Gods so home made is an added bonus.

I didn't follow a recipe, I just remember a friend's mom making it and it just stuck because it's ridiculously easy.

You need

A box of Oreos *or the bootleg kind, I really love the ones from Safeway because they have penguins with bow-ties on the cookie*

*Safeway is an American Grocery store*

1 package of Cream Cheese (8oz. package)

1 packet of unflavored gelatin

1 cup of white sugar

1 tsp of Milk

Melted Butter

Oreos here are slightly different from ones in the U.S.  I'm living in Manila, but these are from Indonesia :o.  That's crazy yo!  Sometimes I crave for "Biskuit Sandwich Coklat" from time to time.

These Indonesian Oreos are smaller and look more brown :o  The cream has a more milky taste and these were easier to open.  There was a smaller amount of cream in this one too! :(

Separate the cookie from the cream and CRUSH them!  Mix with melted butter and press onto a pan.  It looks like soil, but this soil causes diabetes.

TA-DAH!  Compressed the crust.  I forgot this wasn't a spring form pan so yeah, fail on my part, but it looks cute :3  You can give it to a special person.....or just hoard it to yourself and huddle in a dark corner.

For the filling, just put in softened Cream Cheese with the milk and sugar.  For the gelatin, follow the manufacturer's instructions and dump it in as well.  I started to fork the cheese and It looked like it was screaming.  I just put a face on it and made it go "ah yah"!

What it looks like when you add everything in the bowl.  I think I ate like a third of the mixture.  

Fill this up!  
Through Sailor Moon like magic, It chilled really quickly.

Flip the pan over a plate and pray it comes out.  I forgot to add, just pace the mold in warm water and make sure it's submerged halfway, then flip it over.  It came out but the crumbs started to fall out, whoops.  I should have put more butter but oh well, less calories I think :0  My brother was drooling over this and I let them take the first bite hahaha.



It tasted FUCKING delicious.  This took about 6 hours to make, but less than 20 to finish.  Oh the cruel Irony T-T  This is really easy to make!  No baking required, unless you like to "bake" at the same time to stimulate appetite, then by all means "bake".

Korean Food


I always try to frequent this restaurant once a week.  It's one of my favorites near school because this place offers more than fried chicken, McDonald's fries and douches playing beer pong during the day.  It's pretty quiet and cozy, Although, I wish the tables were different because I hate sitting with strangers/sitting near them.  The restaurant is called Korean Fellow Feeling.  The name makes absolutely no sense.  It's one of my favorite places to spend time with friends when we just want something simple and wholesome to eat. Btw this isn't sponsored or anything like that.  I just love food and I really felt like this place is special enough for me to share with you guys!

 Every time I wait for my order, I love to analyze the meaning deeply.  Perhaps it's about feeling the   camaraderie with fellow diners as we partake in Korean food.  The Tiger with a chef hat is nice touch too!  Nothing is more comforting than a Tiger capable of holding utensils and no eyelids.
 I love practicing my Hangul here.  If you can read/understand some Korean it's fun to practice here.  Sprite on the menu is written as "sa-i-da" Or cider.  I thought they sold Chillsung cider/칠숭사이다 here and I got kinda disappointed.  ㅠㅡㅠ
 The stuff my dreams and blog are made of...KIMCHI!  Their kimchi is handmade and you can order a head of kimchi on their menu for take out :D  You can almost taste the Ahjumma's blood, sweat and tears in every fermented morsel.
 I always default to Bibimbap whenever I go here.  It's so filling and waaaay better than the other bibimbap  that whack joints nearby try to sell.  The veggies are super fresh and they're not stingy at all!  I wish they added a hot stone bowl/Dolsot/돌솥 and Gosari/고사리/I have no Idea what it is in english Google it maybe?

They have this wall on the 2nd floor where you can write on it :)  I wish people had more interesting/clever stuff to write on the walls.  But I still laughed hahaha. If you look closely, You can see Darren and Ally's writing on the wall.  I think CL is a lost relative of Darren and Ally clearly loves Park Bom haha.The guy in the middle is holding something...how do you say it politely?....something ...dick shaped.  Well, this is my favorite place to eat at and I can't wait to greet the Ahjumma.  If she likes you, she might give you free ice cream!  If not, it's because you were being a 새끼

Pumpkin Pasta

     I really had a craving for pasta and I didn't want anything too sharp and tangy. I suddenly remembered that I had a huge ass can of pumpkin puree and the rain/lighting was passive aggressively telling me to stay the fuck inside.  Lighting is such an asshat.  Anyway, I whipped up something I always default to when I want something fillin and healthy to eat in pasta form.  Pumpkin sauce is my favorite sauce to make and can be vegan if you wanted too.  Since I was confined in my condo, I just improvised and came up with this easy and delicious sauce.  Oh yeah, Chef Boyardee can suck it, he got NOTHIN' on mah sauce!





     Here are the basic Ingredients: BTW, I didn't bother to measure, I just pulled a Rachel Ray and haphazardly dumped things in to my taste and memory.  Technically, this isn't a recipe, it's my sad attempt at giving instruction, but hey, look at the pictures!  If you're hesitant about trying this, contact me if you are dying to know and I'll do my best and summon the power of the Gods and give you the measurements.  Than I'll judge you for not living life on the edge. -Nutmeg
-Sage
-Garlic
-Onion
-Pasta
-Salt
-Pepper
-Pasta Water
-Milk
-Cheese (any hard cheese that can be grated )
-Basil


The star of this attempt of a recipe.  Canned pumpkin.  You can use fresh, but this is WAY more convenient.



 I wish I had better access to fresh herbs, this will suffice I guess :/ 
         
        


       
          I only had red onions :(  White ones are better for this.  Also, garlic is pretty delicious and they are important in the recipe.  The canned Pumpkin has a sweetness to it and I think the Sage and Cheese help round it out.

          When the pasta is done cooking save some of the water for later.  Put the veggies and herbs in a pot with oil in it.  I used Sesame oil this time because I love the nutty flavor it adds to the Pumpkin. After they've sauteed for 10 minutes  on medium heat, add the pasta water pumpkin and milk.  Add the grated cheese of your choice after you simmered the sauce for 20 minutes on low, I used Parmesan. (I forgot to take pics :x)



The milk isn't nasty, it's a funny catch phrase from an Internet show.  I watch too much Simon and Martina.  If you get the picture,  We have to be friends!



Drain the bastards.  I love this pasta!  I always get so excited when I see this in my care package.  

Plate the pasta :o  So pretty!


MMMMMMMM sauce.


Sprinkle some Basil on this to indicate that it's healthy and pretentious

Kimchi Party!





My blog is called "Kimchi Party"  because

     


1.) I freaking ADORE Kimchi
                                                          2.) I like Parties
                                                          3.) I couldn't think of anything better, hey, it's pretty catchy.

Besides my "passion for fashion" *gross cliché*, I really like to cook food.   Food is the best way to learn about culture.  I really think Korean Food doesn't get the recognition it deserves.  It's so dynamic with it's colors and flavors that I can't get anywhere else.

Anyway, Unlike most people, I'd rather make it myself than buy , and Kimchi is one of those things that taste so much better when made from scratch.  I really encourage all my readers to try making something themselves from time to time.  You would never know how good you are at it, or how much better it is!

I started Kimchi making around my freshman year of college when I lived in San Francisco(2009).  I had so much access to different cultures!  I lived in the SOMA neighborhood and it was near the civic center plaza where there would be farmer's markets selling local produce that was not only affordable, but organic!  I used Maangchi's recipe for my kimchi recipe.  Hands down, Emily Kim (Maangchi) is the best Korean food guru!  I like to watch her videos because she kind of reminds me of a Korean mom EVERYONE wants :)

Sorry for being too wordy, It's important to read from time to time, no?  Besides, Kimchi is super healthy and nutritious for you!  It goes great with a lot of meats, fried/grilled.  I LOVE LOVE LOVE eating Kimchi with a steaming bowl of rice  and a fried egg, plus It's a super fast and healthy breakfast too!
Kimchi making relaxes me hahahahaha I'm an Ahjumma in training!  I promise to post more Fashion/D.I.Y in the future.  I just want to share the gift of Kimchi hahahaha

Let's start :) *btw, I'm not going to be very detailed in this post, Maagnchi's site will tell you the exact measurements, I just wanted to show you How I did it.  btw, I forgot the green onions because I'm smart hahaha*



Hot pepper powder, sugar, rice flour and salt.  These ingredients make the paste for the Kimchi.
You usually add fish sauce or raw oyster/squid to help aid the fermentation process, but I just used fish sauce because my brother's don't like seafood chunks in their Kimchi :(



The star!  Napa cabbage/Chinese cabbage is the most important part of Kimchi/배추 김치

Let it sit in cool dark place after salting
My favorite part is cutting off a LITTLE bit of the ends and splitting the bead in half.  Don't cut it all off, you want the head of cabbage to be intact still.  Wash the cabbage after you cut it.  

you chop the veggies, you should add water to your rice flour and heat it in a pot on the stove on low heat.  Add the hot pepper flakes and fish sauce too!  Then add your chopped veggies.

Store it in an airtight container! Leave out for a day to fully ferment :D

Summer Chili


       My first Recipe post for this blog :)  I really wanted something Tex-Mex and hearty so I defaulted to Chili.  I love the smokey, meaty and heat it gives when you take a bite!  I've tried Chili from restaurants in the Philippines and let me say, they have been really disappointing.  Rather than sit back, I decided to make it myself from scratch :)  The great thing about this that you can leave out the meat if you want to make it Vegetarian!  I'm no chef, but I like to cook often and I'd rather buy ingredients to cook than go out to eat.  Plus, my paranoia of food poisoning is gone when I know I cooked it myself.  Let's start!

Ingredients:

1/2 Kilo of Ground Beef
1/2 kilo of Tomatoes (Fresh!!!!!)
2 Tbsp of Tomato paste
1 can of Kidney beans
1/2 cup of White beans
1/2 tbsp of Cumin
2 Tbsp of Chili powder
1 whole White Onion
2 Red Bell Peppers
4 Tiny ass Chili Peppers (these fuckers are HOT)
4 cloves of Garlic
1/2 Tbsp of oil
1 cup of Water
Salt and pepper to YOUR taste (no one wants kidney stones)
A heavy pot of some kind you can cook shit in.

You have to soak these guys for 6 hours at room temperature.  After they're done soaking, you discard the water and set aside for later.


I have no idea what is wrong with me.  I wonder if there will be a Plant version of P.E.T.A.  Yikes!  Food is more fun to make when you imagine them with faces!   Anyway, peel and chop the Garlic like a maniac and rinse the beans and drain.


Hhahahah The lumpy Tomato looks like someone I know.  Hopefully they're full of Lycopene!  The picture after this one is really morbid if you think about it.  I just KILLED THE COUPLE! MUAHAHAHA 
I'm totally joking, I just thought I add some funny banter for those actually reading.  It's fun to read too you know



I warned you, I had to kill them in a Samurai like fury.  OMG imagine if vegetables were like the Mandrake Root from Harry Potter, except they scream when we have to cut them! The horror!  Any way, just de-seed the bell pepper and take out the white membrane stuff from the inside.  No one likes bitter shit in their food.  


     Oh these things, You add them after you brown the meat.  (I didn't take a picture of the meat because it literally looked like brains)  Cumin and Chili powder is very important for Chili.  The tomato paste adds a nice, acidity to this.  Idk, it just adds more slow cooked flavored to the dish. 

      For Non-Filipino readers the packaging says "It's really Tomato" and the last bit says "Delicious"  Notice how it's Halal safe and not Kosher safe hahaha I always forget that we don't have a lot of Jewish people in the Philippines.  
What a shame!  I'd KILL for a Latke right now.

Any way, the great thing about this is that you just dump everything in and cook until the meat is browned, then add the water and put on the lid.  Simmer on Medium for an hour and a half.

There you have it! Add cheese or what ever is available that is also cheese like.  Pretty easy and can feed a whole bunch of Mofos in your house.  Serve with corn bread or brown rice.....  






............Or you can serve it with a nice cold beer.  Locally brewed because I'm a hipster (joke)  I hope you guys go out and try it!  Damnit, this would have been great with Tortilla Chips, you know, the ones that come in big ass sacks in the Mexican grocery store.
